Ingredients:
FOR THE DRESSING
- 45 ml (3 tbsp) avocado or olive oil
- 45 ml (3 tbsp) honey
- 30 ml (2 tbsp) lemon juice
- 5 ml (1 tsp) red chilli flakes
- 250 g tub feta, drained
- 125 ml (½ cup) plain yoghurt
- 1 avocado, cubed
- 1 avocado, sliced
- 2 nectarines, cut into wedges
- 2 handfuls cherry tomatoes, halved
- 2 handfuls basil
- handful pistachio nuts, chopped (optional)
Description
Method:
- For the dressing, heat all the ingredients in a small saucepan on medium for about 3 minutes or until just before boiling point. Cool.
- For the whipped feta, blitz together all the ingredients until smooth. Spread out onto a serving platter.
- For the salad, pack all the ingredients on the whipped feta. Serve with the dressing.
