Whipped Feta, Nectarine, Tomato, Avo and Basil Salad

Ingredients: FOR THE DRESSING
  • 45 ml (3 tbsp) avocado or olive oil
  • 45 ml (3 tbsp) honey
  • 30 ml (2 tbsp) lemon juice
  • 5 ml (1 tsp) red chilli flakes
  FOR THE WHIPPED FETA
  • 250 g tub feta, drained
  • 125 ml (½ cup) plain yoghurt
  • 1 avocado, cubed
  FOR THE SALAD
  • 1 avocado, sliced
  • 2 nectarines, cut into wedges
  • 2 handfuls cherry tomatoes, halved
  • 2 handfuls basil
  • handful pistachio nuts, chopped (optional)

Description

Method:
  1. For the dressing, heat all the ingredients in a small saucepan on medium for about 3 minutes or until just before boiling point. Cool.
  2. For the whipped feta, blitz together all the ingredients until smooth. Spread out onto a serving platter.
  3. For the salad, pack all the ingredients on the whipped feta. Serve with the dressing.
