Vegan Smashed Avo Sandwich

Recipe

Ingredients:
  • 2 garlic cloves, crushed
  • zest and juice of 1 lemon
  • 60 ml (¼ cup) avocado or olive oil
  • 10 ml (2 tsp) ground cumin
  • 400 g tin cannellini beans, rinsed and drained
  • 2 avocados, roughly mashed
  • Salt and pepper
  • 8 slices seed loaf
  • Handful baby herbs

Description

Method:
  1. Combine the garlic, lemon zest and juice, oil and cumin. Divide between two bowls. Mix the beans through one of the bowls and roughly mash with a fork. Mix the avocado through the other bowl. Season each with salt and pepper.
  2. Spread the bean mixture over 4 of the loaf slices. Pile the avocado on top, followed by the herbs and remaining loaf slices.
