
Recipe
Ingredients:
- 2 garlic cloves, crushed
- zest and juice of 1 lemon
- 60 ml (¼ cup) avocado or olive oil
- 10 ml (2 tsp) ground cumin
- 400 g tin cannellini beans, rinsed and drained
- 2 avocados, roughly mashed
- Salt and pepper
- 8 slices seed loaf
- Handful baby herbs
Description
Method:
- Combine the garlic, lemon zest and juice, oil and cumin. Divide between two bowls. Mix the beans through one of the bowls and roughly mash with a fork. Mix the avocado through the other bowl. Season each with salt and pepper.
- Spread the bean mixture over 4 of the loaf slices. Pile the avocado on top, followed by the herbs and remaining loaf slices.
