Recipe
Ingredients:
- 170 g tin tuna in brine, drained
- 60 ml (¼ cup) gherkins, finely chopped
- 1 small red onion, finely chopped
- 60 ml (¼ cup) mayonnaise
- 30 ml (2 tbsp) sweet chilli sauce
- Juice of ½ lemon, to taste
- Salt and pepper
- 1 avocado, halved, stoned and skin removed
- Small handful baby herbs
Description
Method:
- Combine the tuna, gherkins, onion, mayo, sweet chilli and lemon juice. Season with salt and pepper.
- Trim bottoms of the avocado halves and place on two plates. Season with salt and pepper. Spoon the tuna salad into the avo holes, piling it up. Top with baby herbs.
