
Smokey Charred Romaine Lettuce, Bacon and Avo Salad

Ingredients:
FOR THE SALAD DRESSING
- 60 ml (¼ cup) olive or avocado oil + extra
- Juice of 1 lemon
- 30 ml (2 tbsp) honey
- 10 ml (2 tsp) wholegrain mustard
- Salt and pepper
- 4 heads romaine lettuce, halved through the length
- 2 avocados
- 200 g packet crispy diced bacon
- 80 ml (⅓ cup) white cheddar, finely grated
Description
Method:
- For the dressing, combine all the ingredients. Season with salt and pepper.
- For the salad, brush the cut sides of the lettuce with extra oil. Cook in batches, cut side down, on a griddle pan over medium high heat for about 3 minutes or until starting to char in places.
- Place the lettuce on a serving platter and drizzle over the dressing. Top with avo, bacon and cheddar.
