Smashed Avo on Grilled Flatbread with Chilli Oil



For the Chilli Oil 
  • 1 small onion or 2 shallots, finely sliced
  • 2 cloves garlic, finely chopped
  • 2 chillis, deseeded and sliced
  • 15 ml (1 tbsp) sesame seeds
  • 125 ml (½ cup) avocado or olive oil
For the Sandwich
  • 2 large ripe avocados, peeled and stoned
  • Avocado or olive oil, to drizzle
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • 2 large eggs, cooked to your liking (fried or poached)
  • 2 large flatbreads, grilled
  • Flat leaf parsley, to serve


  1. Place all the chilli oil ingredients in a shallow frying pan and gently cook over medium heat until the garlic and onions colour, watch closely as it can burn quickly. Remove from the heat once the garlic is brown, set aside and allow to cool and infuse.
  2. To serve, smash the avo with lemon juice and zest, and season. Spread the avocado over the grilled flat breads, and top each with the egg. Drizzle over the chilli oil and garnish with flat leaf parsley. Serve with extra chilli oil.
