Open Cheese Toasties with Avo Salsa

Ingredients:
FOR THE TOASTIES
- 8 slices French loaf
- Soft butter, for spreading (optional)
- 30 ml (2 tbsp) grainy Dijon mustard
- 375 ml (1½ cups) grated cheddar
- 15 ml (1 tbsp) avocado or olive oil
- 15 ml (1 tbsp) lemon juice
- ½ garlic clove, crushed
- ½ red onion, chopped
- 1 small jalapeno, chopped (optional)
- Handful coriander, chopped + extra
- 1½ avocados, chopped
- Salt and pepper
Description
Method:
- For the toasties, preheat the oven to 200°C. Spread the bread with butter and mustard.
- Sprinkle over the cheddar. Bake for about 12 minutes or until melted and starting to crisp.
- For the salsa, combine the oil, lemon juice, garlic and onion. Stir through the jalapenos (optional)coriander and avocado. Season with salt and pepper.
- Serve the toasties topped with the salsa and extra coriander.
