Open Cheese Toasties with Avo Salsa

Ingredients: FOR THE TOASTIES
  • 8 slices French loaf
  • Soft butter, for spreading (optional)
  • 30 ml (2 tbsp) grainy Dijon mustard
  • 375 ml (1½ cups) grated cheddar
  FOR THE SALSA
  • 15 ml (1 tbsp) avocado or olive oil
  • 15 ml (1 tbsp) lemon juice
  • ½ garlic clove, crushed
  • ½ red onion, chopped
  • 1 small jalapeno, chopped (optional)
  • Handful coriander, chopped + extra
  • 1½ avocados, chopped
  • Salt and pepper

Description

Method:
  1. For the toasties, preheat the oven to 200°C. Spread the bread with butter and mustard.
  2. Sprinkle over the cheddar. Bake for about 12 minutes or until melted and starting to crisp.
  3. For the salsa, combine the oil, lemon juice, garlic and onion. Stir through the jalapenos (optional)coriander and avocado. Season with salt and pepper.
  4. Serve the toasties topped with the salsa and extra coriander.
  Tip: Try a combination of mature cheddar and mozzarella.
