MINI PITAS WITH LIME CHICKEN, AVOCADO & TRIO OF CONFETTI PEPPERS

Recipe

  • 2 cooked chicken breasts (leftover roast chicken or grilled chicken can also be used)
  • 2 large ripe avocados, mashed
  • 1 lime juice and zest
  • 2 – 3 red spring onions, sliced
  • 1/2 each red, yellow or orange peppers, finely diced
  • 8 -12 mini pitas
  • Micro herbs
  • Salt and pepper for seasoning

Description

  1. Shred the chicken breasts, toss the avocado with the lime juice and zest.
  2. Add diced spring onion and diced peppers, season. Mix the shredded chicken with the avocado and stuff mini pitas and serve with extra lime wedges and garnish with micro herbs.
