MINI PITAS WITH LIME CHICKEN, AVOCADO & TRIO OF CONFETTI PEPPERS
- 2 cooked chicken breasts (leftover roast chicken or grilled chicken can also be used)
- 2 large ripe avocados, mashed
- 1 lime juice and zest
- 2 – 3 red spring onions, sliced
- 1/2 each red, yellow or orange peppers, finely diced
- 8 -12 mini pitas
- Micro herbs
- Salt and pepper for seasoning
- Shred the chicken breasts, toss the avocado with the lime juice and zest.
- Add diced spring onion and diced peppers, season. Mix the shredded chicken with the avocado and stuff mini pitas and serve with extra lime wedges and garnish with micro herbs.
