
HOMEMADE SMOKEY BAKED BEANS ON SOURDOUGH TOAST WITH SMASHED AVOCADO

Recipe
- 2 ripe avocados, peeled and mashed
- 1 x 400g red kidney beans
- 1 x 400g can cannellini beans
- 1 cup chopped onion
- 2 cloves garlic
- 1 cup dark brown sugar
- 1 ½ cups BBQ sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon chipotle chilli paste
- 2-3 tablespoons Worcestershire sauce
- To serve – sourdough toast
Description
- Sauté the onion and garlic for 5 minutes until translucent.
- Add the sugar, BBQ sauce, mustard, chipotle and Worcestershire sauce.
- Stir to combine and add the beans.
- To serve top sourdough toast with smashed avocado and pile baked beans on top.
- Garnish with extra avocado slices.
