HOMEMADE SMOKEY BAKED BEANS ON SOURDOUGH TOAST WITH SMASHED AVOCADO

Recipe

  • 2 ripe avocados, peeled and mashed
  • 1 x 400g red kidney beans
  • 1 x 400g can cannellini beans
  • 1 cup chopped onion
  • 2 cloves garlic
  • 1 cup dark brown sugar
  • 1 ½ cups BBQ sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chipotle chilli paste
  • 2-3 tablespoons Worcestershire sauce
  • To serve – sourdough toast

Description

  1. Sauté the onion and garlic for 5 minutes until translucent.
  2. Add the sugar, BBQ sauce, mustard, chipotle and Worcestershire sauce.
  3. Stir to combine and add the beans.
  4. To serve top sourdough toast with smashed avocado and pile baked beans on top.
  5. Garnish with extra avocado slices.
