Green Quesadilla

Recipe

  • 45 ml (3 tbsp) mayo
  • 25 ml (¼ tsp) green chilli, chopped (optional)
  • Small handful basil + extra
  • 1 tortilla
  • 125 ml (½ cup) mozzarella, grated
  • 30 ml (2 tbsp) feta, crumbled
  • ½ avocado, sliced
  • Salt and pepper
  • Handful wild rocket

Description

  1. Blitz the mayo, chilli (if using) and basil together in a small blender.
  2. Place the tortilla in a large frying pan over medium heat. Sprinkle the mozzarella, followed by the feta, over one half of the tortilla. Cook for about 3 minutes or until the mozzarella has melted. Take off the heat.
  3. Season the avo with salt and pepper and place on top of the mozzarella mixture followed by the rocket and extra basil. Spoon over the basil mayo.
  4. Fold the empty half of the tortilla over the filling. Cut in half and serve immediately.
