Green Goddess Salad

Recipe

Ingredients:
  • 500 ml (2 cups) peas, defrosted
  • 2 baby gem lettuce hearts
  • 1 avocado, sliced
  • 60 ml (¼ cup) pecorino, finely grated
  FOR THE DRESSING
  • 60 ml (¼ cup) mayonnaise
  • 60 ml (¼ cup) avocado flesh
  • 15 ml (1 tbsp) Dijon mustard
  • Lemon juice to taste
  • 15 ml (1 tbsp) avocado or olive oil
  • 2 handfuls mixed herbs (such as dill, chives and parsley)
  • Salt and pepper

Description

Method:
  1. Cover the peas with boiling water and set aside for 3 minutes. Drain. Place the lettuce, peas and avocado on a platter. Sprinkle over the pecorino.
  2. For the dressing, blitz together all the ingredients. Season with salt and pepper. Serve with the salad.
