Ingredients:
- 500 ml (2 cups) peas, defrosted
- 2 baby gem lettuce hearts
- 1 avocado, sliced
- 60 ml (¼ cup) pecorino, finely grated
- 60 ml (¼ cup) mayonnaise
- 60 ml (¼ cup) avocado flesh
- 15 ml (1 tbsp) Dijon mustard
- Lemon juice to taste
- 15 ml (1 tbsp) avocado or olive oil
- 2 handfuls mixed herbs (such as dill, chives and parsley)
- Salt and pepper
Description
Method:
- Cover the peas with boiling water and set aside for 3 minutes. Drain. Place the lettuce, peas and avocado on a platter. Sprinkle over the pecorino.
- For the dressing, blitz together all the ingredients. Season with salt and pepper. Serve with the salad.
