AVOCADO BREAKFAST PITA PIZZA
- 2 pitas (toasted if desired)
- 1 tablespoon avocado or olive oil
- 2 ripe avocados, peeled
- Handful button mushrooms, sautéed
- Small handful cherry tomatoes, cut in half and sautéed
- Rasher bacon, grilled (optional)
- Salt and pepper, to taste
- In a bowl mash one of the avocados. Season with salt and pepper.
- Slice the second avocado and set aside.
- Toast or grill the pita, and spread each pita with half the avocado, and top with the remaining ingredients, mushrooms, tomatoes and bacon.
- Top with slices of avocado, season and serve while warm.
