AVOCADO BREAKFAST PITA PIZZA

Recipe

  • 2 pitas (toasted if desired)
  • 1 tablespoon avocado or olive oil
  • 2 ripe avocados, peeled
  • Handful button mushrooms, sautéed
  • Small handful cherry tomatoes, cut in half and sautéed
  • Rasher bacon, grilled (optional)
  • Salt and pepper, to taste

Description

  1. In a bowl mash one of the avocados. Season with salt and pepper.
  2. Slice the second avocado and set aside.
  3. Toast or grill the pita, and spread each pita with half the avocado, and top with the remaining ingredients, mushrooms, tomatoes and bacon.
  4. Top with slices of avocado, season and serve while warm.
