Avo with Curried Shrimp Cocktail

Ingredients:
  • 45 ml (3 tbsp) mayonnaise
  • 80 ml (⅓ cup) plain yoghurt
  • 10 ml (2 tsp) honey
  • 30 ml (2 tbsp) mild curry powder
  • zest and juice of 2 limes + extra wedges
  • Salt and pepper
  • Avocado or olive oil for frying
  • 1 onion, thinly sliced
  • 1 garlic clove, crushed
  • 1 red chilli, thinly sliced (optional)
  • 400 g shrimp, defrosted
  • 4 baby gem lettuce leaves
  • 1 avocado, halved

Description

Method:
  1. Mix the mayonnaise, yoghurt, honey, 15 ml (1 tbsp) of the curry powder and half the lime zest and juice together. Season with salt and pepper.
  2. Heat a good splash of oil in a frying pan on a medium-high and fry the onion for about 10 minutes until caramelised. Stir through the remaining 15 ml (1 tbsp) curry powder, garlic and chilli, if using and cook for 1 minute.
  3. Add the shrimp to the onion mixture and cook for 1 minute or until pink. Stir through the remaining lime zest and juice. Season with salt and pepper.
  4. Stone, peel and cut the avocado into 4 wedges. Place a wedge and lettuce leaf in each of four serving glasses. Add the shrimp mixture and dollops of the sauce.
