Avo Pesto Pasta

Ingredients:
  • 500 g packet penne pasta
  • 4 avocados, thinly sliced
  • 2 handfuls basil + extra
  • 125 ml (½ cup) Pecorino, grated + extra
  • 125 ml (½ cup) olive or avocado oil
  • juice of 2 lemons
  • Salt and pepper

Description

Method:
  1. Cook the pasta according to package instructions. Drain.
  2. Blitz half of the avocado, basil, Pecorino, oil and lemon juice until it forms a pesto. Season with salt and pepper. Toss the pesto through the pasta.
  3. Garnish with extra basil, Pecorino and remaining avocado.
