
Recipe
Ingredients:
- 500 g packet penne pasta
- 4 avocados, thinly sliced
- 2 handfuls basil + extra
- 125 ml (½ cup) Pecorino, grated + extra
- 125 ml (½ cup) olive or avocado oil
- juice of 2 lemons
- Salt and pepper
Description
Method:
- Cook the pasta according to package instructions. Drain.
- Blitz half of the avocado, basil, Pecorino, oil and lemon juice until it forms a pesto. Season with salt and pepper. Toss the pesto through the pasta.
- Garnish with extra basil, Pecorino and remaining avocado.
