Ingredients:
  • Handful basil + extra
  • 30 ml (2 tbsp) avocado or olive oil
  • 15 ml (1 tbsp) lemon juice
  • 125 ml (½ cup) shaved white cheddar
  • Salt and pepper
  • 2 avocados, peeled
  • Crackers, to serve

Description

Method:
  1. Blitz together the basil, oil, lemon juice and half of the cheddar until a pesto forms. Season with salt and pepper.
  2. Thinly slice a whole avocado through the length (gently lift around the pip). Pack on a serving plate. Repeat with the remaining avocado. Season with salt and pepper.
  3. Top with pesto, remaining cheddar shavings and extra basil. Serve with crackers.
