Avo Banana Bread

Ingredients:
  • 1 over-ripe avocado, mashed
  • 4 over-ripe bananas, mashed
  • 80 ml (⅓ cup) sunflower oil
  • 250 ml (1 cup) brown sugar
  • 5 ml (½ tsp) salt
  • 500 ml (2 cups) self-raising flour

Description

Method:
  1. Preheat the oven to 160°C. Grease an 11 cm x 21 cm loaf tin.
  2. Beat together the avo, banana, oil, sugar and salt. Add the flour and mix until just combined. Do not overmix!
  3. Scrape the batter into the prepared tin. Bake for about 1 hour 10 minutes or until a testing skewer comes out clean. Cool in the pan before turning out.
  Optional: Add 7.5 ml (½ tbsp) ground cinnamon to the batter for extra flavour.   Serving suggestion: Blitz half an avo with 60 ml (¼ cup) syrup. Spread over toasted slices of the bread.   Note: This is a great recipe to use up over-ripe bananas and avocado. Avocado acts as an egg replacement in this recipe to make this banana bread vegan friendly.
