Avo Banana Bread

Ingredients:
- 1 over-ripe avocado, mashed
- 4 over-ripe bananas, mashed
- 80 ml (⅓ cup) sunflower oil
- 250 ml (1 cup) brown sugar
- 5 ml (½ tsp) salt
- 500 ml (2 cups) self-raising flour
Description
Method:
- Preheat the oven to 160°C. Grease an 11 cm x 21 cm loaf tin.
- Beat together the avo, banana, oil, sugar and salt. Add the flour and mix until just combined. Do not overmix!
- Scrape the batter into the prepared tin. Bake for about 1 hour 10 minutes or until a testing skewer comes out clean. Cool in the pan before turning out.
